Grandma Flickinger’s Christmas Cookies – Filled
Ingredients:
Dough
- 1 cup cup butter - (230g)
- 2 cups brown sugar - (400g)
- 2 eggs
- 3 1/2 cups flour - (564g)
- 1 1/2 tsp cream of tartar - (8g)
- 1 1/2 tsp baking soda - (9g)
- 1/2 tsp salt - (3g)
- 1 Tbsp vanilla
Filling
- 1 cup seeded prunes
- 1 cup dried apricots
- 2 Tbsp lemon juice
- .25 cup sugar
- .5 cup water
Directions:
- Cream 1 cup cup butter; add 2 cups brown sugar; stir in 2 eggs beating after each addition, and 1 Tbsp vanilla. Add 3 1/2 cups flour sifted with 1 1/2 tsp baking soda, c1 1/2 tsp cream of tartar, and 1/2 tsp salt. This will be a thick dough. Roll out thin 1/4 inch thick.
Filling
- Add 1 cup seeded prunes 1 cup dried apricots 2 Tbsp lemon juice .25 cup sugar .5 cup water to pan. Heat to a simmer. Puree with immersion blender until smooth. Simmer to thicken to a thick paste.
Assemble
- Cut in shape and place two together with filling in between. Pinch sides with fork.
- Bake 350 degrees for about 25 minutes.
Notes
Here are the recipes. Both of these recipes aren’t great on the measurements as they are very old and I guess way back (these are over 100 years old) they didn’t measure that great. For the flour measurement in both you need to adjust so I don’t add the full amount at once until I determine if batter can handle all that flour. I’m also copying the recipe exactly as Daniel’s grandmother (Flickinger) wrote them.
