Southwest Pasta
Ingredients:
- 1/2 onion - diced
- 1/2 green bell pepper - diced
- 2 cloves garlic - minced
- 4 tsp chili powder
- 1/2 tsp cumin
- 14 oz diced tomatoes
- 15 oz chickpeas - drained and rinsed
- 5 oz frozen corn
- 8 oz elbow macaroni
- 1/2 cup monterey jack cheese - grated
Directions:
- Saute onion, pepper, garlic, chili, and cumin.
- Stir in tomatoes, chickpeas, and corn.
- Reduce heat to low and simmer 10-15.
- Combine with pasta and sprinkle with cheese.
