Lake Charles Lemon Bread
Ingredients:
- 3/4 cup butter or margarine softened
- 2 1/4 cups flour
- 1/4 tsp soda
- grated rind of 1 lemon
- 3 eggs
- 1/4 tsp salt
- 1/4 cup buttermilk
- 1 1/2 cups sugar
- chopped pecans - optional
Glaze
Directions:
- Cream butter and sugar. Add eggs, beat well
- Add buttermilk and dry ingredients alternately to creamed mixture.
- Stir in lemon rind.
- Pour into greased loaf pan
- Bake 325f for 1 hour 15 min.
- cool 15 min, then remove from pan.
- Combine juice of 2 lemons and 3/4 cup powdered sugar. Stir well.
- Punch holes in top of warm bread with a toothpick and pour glaze over loaf.
- Cool and serve.
